Our dinner table has been painfully and discouragingly empty of veggies. There has not even been a speck of iceberg lettuce to be found. To my credit, I did purchase 4 honeycrisp apples in the past few weeks. Three were eaten before going bad. In the back of my head, often after supper, I think to myself – have got to find more family-friend veggie side dishes. The broccoli with homemade cheese sauce that is what I make if I am actually make vegetables, just isn’t going to cut it, especially when the tastes of the kiddos seem to alternate daily (and yes, they are teenagers.)
So, I was very excited, exuberant even, to find this great post in my inbox. As I bookmarked it, it reminded me that I am absent-minded and this is also a great source for veggie inspiration!
