What to do with leftovers

Before you toss that extra meat or let those vegetables rot in your crisper, get creative with a mexican-style tortilla casserole. As long as you have some cheese, almost anything can be spiced up and stuck together. In this version, Southwestern Tortilla Pie, I alternately layered carnitas with a medley of pinto beans, corn and carmelized onions. The sauce was a classic ranchero and the tortillas low carb. This recipe used a lot of cheese, but you could do with less to reduce fat and calories. This baked for 30 minutes at 375 covered, and then 15 more minutes uncovered.
