Eggs L.A.
Grocery shopping is to me what shoe shopping is to most other women - a stress-relieving, wonderful experience. I especially love the hunt for fresh local produce. Today’s find was local tomatoes!
I don’t think I am quite out of this funk, but one-foot-in-front-of-other is a good strategy… and when faced with “what’s for brunch?”, my creative juices seemed to flow. This take on migas is a nod to my 2 year stint in Southern California.

Eggs L.A.
serves 1
1 pat salted butter
1 rasher nitrate-free bacon, sliced
1 scallion, sliced
2 corn tortillas, sliced
2 cups organic baby spinach, chopped
1 T cold pressed evoo
2 organic eggs
salt & pepper to taste
2 T Creamy Corn Salsa
Melt 1 pat butter in large skillet over medium heat. Add bacon and saute until just beginning to brown. Add scallion and tortilla strips and fry until bacon is crisp. Remove to serving plate. Gently wilt spinach in pan. Remove to plate. Fry two eggs in same pan, over easy. Top with Creamy Corn Salsa or your favorite corn relish.
