Down and out in DC

Happy Easter

Things have been a little off around Spring Lake Cottage, so I apologize for the infrequency of posting and lack of spring-time cheer. I’ve been sick with too-much-snot, had a very sad death in the family, didn’t see the Archives or Washington Monument, gotten behind at work, become addicted to xbox 360 and not felt much like cooking, cleaning or taking photos. I am mentally and physically preparing for some crazybusy months ahead and really need to get my world in order. It’s the calm before the storm, but the anxiety is already ramping up.

One thing I’m trying to do is get a handle on grocery bills, lack of storage and impending life changes by eating mostly from my pantry and freezer. To this end, I’ll be posting a full inventory and asking (i.e. begging and pleading) for your inspiring, tasty ideas. I just don’t have the energy to be creative enough to turn ingredients into food.

Some of my meals so far include: fried eggs and toast, beef & barley soup with cheesy garlic bread, leftover french toast, bacon-cheese black bean burger on toast, leftover pork tenderloin baked with brown sugar - mustard glaze and a horrible salad that I attempted to “italian-ize” with roasted red peppers.

Aw honey–I’m sorry to hear you’re having a rough go of it lately. I am mentally sending you a nice hotdish as I type this. One of these days I’ll get around to posting some more recipes on my site.

My mom used to combine several different kinds of canned soups in the winter when we’d be snowed in. It’s surprisingly good, and definitely best enjoyed w/a nice grilled cheese sammich.
