Pumpkin Coffee Cake

I purchased the can of pumpkin for this recipe from Vegetarian Times nearly a month ago. I finally got the urge to make it, as I was out of nearly everything else sweet in the house. Gotta feed the cravings – in a healthy way of course.

I am usually a big fan of extra streusel topping, but there was just too much in this one. The edges were a little dry, so I suggest reducing the baking time some. I think part of my problem was the size of the pan. The recipe called for 10×10, but all I had was 8×8. This led to some uneven baking. Overall, the flavors were subtle and tasty. I would definitely make this again.

Yummm…that looks delish! A little heavy on the topping, yes, but I could push some of that off and it would work just fine. :)
