
I was 90% skeptical that this would turn out. I pictured dry chicken and a sauce that wouldn’t ever get thick. I was really really wrong. I only made one breast, but you can make up to 4 with this amount of sauce. That would be 6-8 servings of chicken, depending on the size of your breasts. I shredded the tender chicken and used for my staple – soft tacos.
Diet Cherry Coke Chicken
1-4 chicken breasts
1 cup ketchup
1 can diet cherry coke
Combine everything in an appropriately sized pan. Cover and bring to a boil. Reduce the heat and simmer for 35 minutes. Remove the cover and let cook for another 10 minutes, until the sauce is reduced.

I sure will try this one. There can never be too many chicken recipes or ones too easy. When time is short, this one looks like a real winner.
