Hoisin Pork with Pineapple Rice

This is a true 30 minute meal – a surefire, heathy recipe for weeknight chaos. This recipe serves 4 with a fresh green salad (dress with a asian vinaigrette). The flavors are special, but simple enough for the pickiest of eaters.

Hoisin Pork
recipe adapted from Everyday Food: Great Food Fast

1 pound pork tenderloin, halved lengthwise if not already
3 T hoisin sauce
2 T pineapple juice
1 t chopped garlic
1/2 t ginger powder

Preheat broiler. Mix marinade and pour over tenderloin. Marinate for 10 minutes. Place tenderloin on broiler pan with a rack. Broil 10 minutes on each side.

Pineapple Rice

boxed rice pilaf
1 can pineapple with juice, less 2 T juice
1 T soy sauce
1 T butter
enough water to meet recipe’s liquid requirements
1 scallion, sliced thin, to garnish

Mix liquid ingredients and bring to a boil. Add in rice, seasoning mix, butter and pineapple. Follow instructions on box to finish.
