Another Use for Extra Hot Dog Buns

6 hot dogs + 8 buns = 2 extra sad dog-less buns

I didn’t want to defrost another package of hot dogs for the 2 remaining buns, because then I would just have to start the cycle over. These squishy potato buns surely had another calling… and Sunday brunch it was!

Ballpark Brunch, serves 2
Split each bun in half and then sliced the thicker slide horizontally, creating 3 thin slippers of potato bread. Spread each slice with butter and broiled until crisp and golden. I only have one broiler setting, but if you can do “Lo” I would recommend it.

Meanwhile, get 4 slices of maple bacon going on the stove. After sopping up the extra grease, fry four eggs over easy in the same pan. Blot both the bacon and eggs after cooking, to further reduce the unnecessary fat.

Layer the bacon and fried eggs over the toasted bun slippers and dig in. This recipe can easily be halved to serve one person on a lazy morning. Best with a piping hot cup of coffee and a Sunday paper.
