My Favorite Comfort Foods

We are in the depths of winter here (despite today’s short reprieve), with warm nourishing foods never sounding so good. Everyone is either snowed in, has a cold, or wishes spring would come just a little bit faster. To make this dreary time of year seem a little sunnier, I’ve compiled my “Top Ate” list of comfort foods. None of these meals require a recipe, as they are nearly impossible to make inedible. Don’t be afraid of supplementing your from-scratch-goodness with frozen, canned, or packaged foods. Even Grandma sometimes relied on Campbell’s, Stouffer’s and Bisquick!

3. Fried Eggs & Toast
2. Macaroni & Cheese with Fish Sticks

I’d add meatloaf for sure. The chicken pot pie would definitely be on mine and I’m making it next week too! Maybe beef stew with dumplings. If you can rake leaves in February, what you have is not winter! lol…the leaves here are under a couple of feet of snow!

Yum! My mom made some great meatloaf. I’ve had beef stew, but never with dumplings.. will have to try.

I realize that my mid-Atlantic winter doesn’t compare (I will channeling where I want to be), but yesterday was unseasonably warm.

Home made mac and cheese; meatloaf; tomato soup, with or without plain grilled cheese. For munching, keebler butter crackers or home made chocolate chips.

I have never had homemade mac & cheese that I liked. Do you have a favorite recipe?

…and here’s our Mac and Cheese, complete with notes and such –

HOMEMADE MACARONI & CHEESE - 4 servings (Modified to reduce amount of macaroni)

8 oz elbow macaroni

1 1/2 c. Cheddar cheese, grated
1 c. Mozzarella cheese, grated
1/2 lb. Velveeta cheese,sliced

3 tbsp. butter
1/4 c. flour
1 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper

2 1/2 c. milk

Pre-heat oven to 375
Cook macaroni and reserve.

Meanwhile:
Prepare cheeses - grate cheddar; grate Mozzarella; slice 1/2 pound Velveeta. Reserve.
Melt butter in glass Pyrex dish.
To melted butter, add flour, salt, mustard and pepper. Stir until smooth.
Pour butter mixture into moderately large saucepan.
Add milk to mixture. Stir constantly for 10 minutes or until thick, whichever comes first.
Add cheeses. Mix until melted. If necessary, increase heat, but monitor closely for scorching of pan.
Grease 9×13 casserole dish.
Put cooked macaroni in greased casserole dish, pour cheese mixture over and mix well.
Bake uncovered at 375 degrees for 20 minutes.
