    Chicken Fried Chicken

    With one chicken breast and leftover taters in the fridge, I decided to kick it up a notch! I found a great, Texas-style recipe for chicken fried chicken and cream gravy.

    I’ve never cooked anything like this before.. and boy I made quite the mess. I managed to get oil everywhere AND burn myself.. several times. But, this was a fantastic lunch. Blue plate special… coming up!

    I have to say that is the best looking chicken fried chicken I have seen in a long time. I bet it was truly delicious!!

    Thanks so much Sandra – it was delish! If you’ve read some of my other posts, I’ve been struggling with keeping chicken tender. While its not the lowest fat way, this chicken was moist and wonderful.

    The recipe didn’t call for it, but I did pound out the breast and cut into 3 strips. I was worried about it taking too long to cook a whole breast – and I’ve never had anything “chicken fried” that wasn’t flat. I had two of the strips in my lunch above.
