The Leftover Frittata

Last week’s Best Soft Tacos Ever were so tasty, I had to re-purpose them into something else! I combined the tofu, onions and peppers with some garlic roasted potatoes and cilantro pesto. These were spread out into a sprayed 8×8 pyrex dish. I whisked 4 eggs with 2 T fat free half & half, some salt and pepper. I poured this mixture over the veggies and topped with 1/3 cup shredded colby jack. Bake at 400 until golden and fluffy. I imagine you could do this with a lot of cooked protein & veggie combos. What do you like to re-make into a frittata. (FYI – I did this a few days later, these are not week-old leftovers!)
