    Quick & Comfy: Best Soft Tacos Ever

    A storm passed through on Thursday, finally cooling things off a bit. I’ve been avoiding firing up the stove, especially the griddle, to keep the place cooler. Since its “only” 86 out now, I threw together these veggie soft tacos. They were simply heavenly! The cilantro pesto absolutely MAKES the dish.

    vidalia onion, red bell pepper, savory baked tofu, hot sauce,
    corn tortillas, cilantro nut pesto, shredded colby jack, light sour cream

    [...] Last week’s Best Soft Tacos Ever were so tasty, I had to re-purpose them into something else! I combined the tofu, onions and peppers with some garlic roasted potatoes and cilantro pesto. These were spread out into a sprayed 8×8 pyrex dish. I whisked 4 eggs with 2 T fat free half & half, some salt and pepper. I poured this mixture over the veggies and topped with 1/3 cup shredded colby jack. Bake at 400 until golden and fluffy. I imagine you could do this with a lot of cooked protein & veggie combos. What do you like to re-make into a frittata. (FYI – I did this a few days later, these are not week-old leftovers!) [...]
