This evening I was in a funk, so naturally, I decided to bake. I found some inspiration and set about it. As always, I am short a few ingredients, so I improvise.

Instead of 2 large egg whites, I used one large mashed banana.
Instead of OJ, I used 1/4 cup fat free half and half and 1/4 cup rice milk.
Instead of brown sugar, I used the Splenda replacement, but accidentally used too much!
Instead of 1 T flour, I used 1 T corn meal.

My creation is in the oven now. I will photograph tonight and sample in the morning. I can’t wait to share the results!
