Quick & Comfy: Broccoli Cheese Baked Potato Pierogies
This is a bit of a weird creation, but it hit the spot in my stressed out tummy! I apologize for the lack of photos. I was starving and didn’t think to snap a few until it was 2/3 gone. A semi-eaten dish is just not photogenic.
Start with 5 or 6 frozen potato-onion pierogies in a sprayed, hot pan. Fry on one side until brown and add 1/2 bag of frozen broccoli cheese mixture, or just frozen broccoli. Flip pierogies while the broccoli cooks. Top with bacon bits, french fried onions and cheddar cheese. Broil for 2 minutes until golden and melty. Top with sour cream and enjoy!
