Spring Couscous Salad
Today’s lunch was a quick fix and did not include eggs, tortillas or cheese. This vegan recipe includes: toasted pine nut couscous, orange bell pepper, grape tomatoes, green olives, veggie pepperoni and a lemon dressing. Though the weather has turned sour again, this splash of sunshine brightened the afternoon!

That does look good. I would have put it in a flour tortilla and added cheese and sour cream. Quite the heresy!

Psshh. Corn tortillas are only put on this earth for migas, nachos, and enchiladas. To use them for tacos may get you excommunicated.
