It’s new recipe week!

Savory Scrambled Eggs-Tm

For far too long, I’ve been subsisting on frozen- and fast-foods for supper. Fast foods being scrambled eggs and french toast far more than anything with a drive-thru. Last week’s forced creativity gave me a great boost. It tickled my foodie fancy and told me “It’s time to change things up a bit.” So I broke out the ol’ “recipes to try” folder and picked some quick & easy, yet comforting meals. I will post photos and a bite-by-bite recap throughout the week.

On the Menu

- Verde “Chicken” Enchiladas (similar to this recipe)

From [Gluten-Free] Goddess
- Nachos Fabuloso (with the addition of refried beans)
- Pineapple Brown Rice Bake (spinach, not salmon, version)

From 101 Cookbooks
- Mashed Potatoes with Kale and Olive Oil (served with BBQ tofu)

From Country Living
- Pantry Pasta (April 2007 issue)
