Fondue Quesadilla
The quest to eat up all that is left continues. For the first course, I had a bowl of chili. My second course is the feature here tonight.
Spray hot griddle with cooking spray. Lay out 2 corn tortillas.
Flip and spread a Laughing Cow Light wedge on one tortilla. Top with other half.
Cook until brown and then flip.
Serve with cherry preserves.
So I was thinking, what in the heck do I call this? It was slightly sweet without the preserves, but they added a heavenly touch. Swiss and cherries… fondue! I will definitely make this one again. Sorry, it disappeared before I could snap a pic.
