Bring me more migas!

Here’s an anytime-you’re-hungry recipe. The ingredients are things I almost always have on hand.

Everyday Migas, serves 1

1 T butter
1 sprouted grain tortilla, cut into strips
2 eggs
2 T rice milk or skim dairy milk
2 T grated or crumbled cheese
1-2 scallions, chopped
1-2 T ranchero sauce (optional)
1/2 avocado, sliced (optional)

Cut the sprouted grain tortilla into 3 inch long thin strips. Use a fork to whip the eggs with the milk. Add butter to a nonstick pan over medium heat. Fry tortilla strips until crisp. Reduce heat to medium-low. Coat pan and tortilla strips with cooking spray. Add eggs and scramble. Add cheese and scallions halfway through. Serve with ranchero sauce and avocado.

Wow! That sounds good.
My migas recipe is a bit different from that. I warm up some canola oil in a pan until it’s nice and hot. Then I take 3 corn tortillas and cut each one into 1/12ths (about the size of a small tortilla chip). The I fry them up until they’re pretty crispy. I take them out and set them on a paper towel to soak up any lingering oil.
Then I scramble up 5 egg whites and 2 eggs with the yolks. Yum. Then I toss in about 1/2 cup of tomato sauce and mix it with the scrambled eggs and toss in the tortilla chips. Then sprinkle some shredded cheese on top and, voila, migas fit for a king! Garnish as desired and serve hot.

I need to do better about using more egg whites and fewer yolks. I eat about a dozen eggs a week by myself… is that bad?

hmm…well, considering egg yolks contain 72% (or so) or your daily cholesterol, as long as you don’t eat the dozen in one day, you’ll probably live. I don’t know if it’s that good or bad cholesterol.
