Peanut Stew

In this version, I added some hoisin, lime juice and cilantro, to give it a slight thai bent. It’s really more of an African dish, e.g. groundnut stew. For the veggies, I used onions, peppers, yams, mushrooms and kale. I served it with toasted pine nut couscous and a sprinking of cilantro.
